Why Sweet Potatoes Make Great Cookies
Sweet potatoes add more than just flavor to these cookies. They bring moisture, natural sweetness, and nutrients like fiber, vitamins A and C, and antioxidants. Using sweet potatoes means you can reduce or completely skip added sugar, which is why I use maple syrup as a gentle sweetener. This keeps the cookies moist and tender without making them overly sweet.
The addition of dark chocolate chips adds a rich, slightly bitter contrast that balances the natural sweetness of the sweet potato. Dark chocolate also contains antioxidants and less sugar than milk chocolate, making it a better choice for healthier baking.
Ingredients You’ll Need
Here’s what you’ll need to make about 24 cookies:
1 cup cooked and mashed sweet potato (about 1 medium sweet potato)
1/4 cup Coconut Oil, melted
1/4 cup plain Greek Yogurt
1/2 cup Un-Salted Butter
1 1/3 cup Pure Maple Syrup
1 Tablespoon Vanilla Bean Paste or Extract
2 Large Eggs
3 cups/375 grams of Sifted Unbleached All Purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon of Baking POWDER
1 Tablespoon ground Cinnamon
1 teaspoon Diamond Crystal Kosher Salt
1 cup Dark Chocolate Chips
1 cup of White Chocolate Chips
How to Make Sweet Potato Dark Chocolate Chip Cookies
Step 1: Prepare the Sweet Potato
Start by cooking your sweet potato. You can bake it in the oven at 400°F (200°C) for about 45 minutes or Peel then Chop in cubes and Boil until tender. Once cooked, mash it until smooth. Let it cool before using it in the dough.
Step 2: Mix Wet Ingredients
In a large bowl, combine the mashed Sweet Potato, melted Coconut Oil, Greek Yogurt, Unsalted Butter, Maple Syrup, and Vanilla Extract. Stir well until the mixture is smooth and uniform. I like to use my immersion blender to get past that separation stage.
(*If you want a butter free cookie, up the amount of coconut oil and greek yogurt to 1/2 cup each.)
(***If you want a butter rich cookie, omit the oil and yogurt altogether, and use 1 cup of browned Unsalted Butter!)
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together the Flour, Baking Soda, Baking POWDER, Cinnamon, and Salt. This ensures the leavening agent and spices are evenly distributed.
Step 4: Form the Dough
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the cookies tender. Fold in the Dark Chocolate Chips last.
(*If you want all Dark Chocolate, use 2 cups of chips instead.)
Step 5: Shape and Bake
Cover the bowl and place in the refrigerator to help the scooping process later, about 20min. Preheat your oven to 375°F. Line a baking sheet with parchment paper. Scoop 2-3 tablespoon-sized portions of dough onto the sheet, spacing them about 2 inches apart. I like to use an ice cream scooper for uniformity.
Bake for 8-13 minutes or until the edges are lightly golden. The cookies will be soft when hot but firm up as they cool.
Step 6: Cool and Enjoy
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. This helps them set perfectly.
Tips for Perfect Cookies Every Time
Use room temperature ingredients: This helps the dough mix evenly.
Don’t skip the cinnamon: It adds warmth and depth to the flavor.
Choose high-quality dark chocolate: The richer the chocolate, the better the taste.
Store in an airtight container: These cookies stay fresh for up to 5 days at room temperature or a week in the fridge.
Freeze for longer storage: Freeze baked cookies or dough balls for up to 3 months.
Experiment with Variations
Once you’ve tasted the basic recipe, try these variations to mix it up:
Add chopped nuts like walnuts or pecans for crunch (just give a quick roast in the oven before adding to the dough) .
Mix in dried fruit such as cranberries, raisins or cherries for extra chewiness.
Swap cinnamon for pumpkin pie spice or ginger for a different flavor profile.
Happy Baking!
We'd love to hear how it goes!
